I'm thinking of building a simple pedal that is nothing more than a volume pot, bypass-able.
I don't do channel switching amps, or even boost or distortion pedals. I run my amp hot and it cleans up good enough with the volume knob.
But, sometimes it's hard to roll it down fast enough for some songs. SO... just stick a volume pot in an enclosure, use a true bypass switch. Maybe even stick an LED and a battery for status indication...
My strat currently is wired to the 50s wiring so it stays clear even when turning down the pot. Since this pot will be after all the tone controls, it should do the same, right?
Wondering if I should go with a 250k or 500k pot.

Some volume pedals have range adjustment. So when you step on it to go down it only goes so far. I'd probably go with a 500k pot it probably won't make any difference since you're going to adjust it once and leave and then use the switch to turn it on and off. Here is a print I saved with LED.
