Re: RIBS!!!
Now I'm 6 hours in... been keepin' it between 210 and 225 with an offset smoker, still no joy!
Now I remember why I used to employ the Texas crutch w/ apple and pineapple half way thru!
The sauce is ready... homemade raspberry sauce.

Re: RIBS!!!
I got Weber Spirit 15 years ago. Then a Weber Bullet to cut my smoking chops on... then a Stoker to help out with that... then a CharGriller w/side box as a multipurpose unit, added a propane flame to the sidebox... then a BIG Weber bullet... then finally a Weber Summit for everyday use... needless to say my patio is full! For pulled pork, I would use one of the bullets (overnite),ValveStorm wrote:BBQ! It was my obsession till I found this place!
I almost dropped 10K on a Klose unit to go out on the BBQ circuit... but instead dropped 20K trying to get THE SOUND!
For the last year or so, it has been mostly about helping other folks get there.
These were done on my heavily modified CharGriller!

Re: RIBS!!!
Gave it a shot yesterday. Have to watch a charcoal grill when its raining out though. I think I put them on too early. Underside was a little dry. Marinated with apple cider, and finished with a maple sauce.
