edwardz,
I really like V30s. I have them in all of my gigging amps.
If I can, I play my 50watt Plexi RI, but unfortunately, I'm not in a blues rock band. So I typically use a Rivera Fandango for most gigs. It is sort of like a Modded Plexi in the "lead" channel and a Fender Concert in the "Clean" channel.
My only complaint about V30s is that with a Marshall at low volumes they can be spikey. However, with a cranked Marshall (even with a Weber MASS turning it way down), they are great.
I haven't had the pleasure of getting speakers from Weber yet, but I really liked dealing with them. And everyone I hear from says they're the best. He really does seem to know his stuff.

I scored a Power Brake last week on ebay, so I'll probably go with Weber's V30 copies. They seem to work pretty well for Warren Haynes. Perhaps Ted can tweek them a bit. I've got a different model 12" Weber in my Deluxe Reverb reissue, and I really like it way better than the stock Jensen. I asked a lot of questions about that speaker before I ordered it, and Ted was cool about it and offered some suggestions. I like the fact that they're made in the US and you deal with Ted himself and not some no-nothing nimrod just collecting a check..
I figure since the V30s are rated at 60 watts, they'll be a more dynamic speaker and not as dirty as a greenback or G12H. Don't think I want to use either of those in a 2X12 with a hundred watt Metro, even with the Power Brake.. I'm thinking I want more dirt than a clean JBL, but a little less than the other Celestions.
Assuming Warren is using his V30 cabs on the recent live Allman Brothers CD, "One Way Out", he's getting some nice sounds with that plexi head he's using with them now.
