100-watt OTs are usually something like 175-0-175, or 350VCT. The earliest 100-watters used a different rectification system and PTs with double the voltage (more than double, actually).
I have used those trannies with a 158Q choke, which is a better choice, IMO. Yes, the PT is a little underspec'd. You don't get full heater voltage and it gets pretty hot. It works fine though, and the voltages are nicer on the tubes than a usual 100-watt PT at 490V. The OT sounds pretty good, actually.
Hammond's "guitar amp" stuff isn't overspec'd like the rest of their stuff.
