How do you match tubes and output transformers?

How do you know if an output transformer will work with a tube set you have picked out. I see that most tube data sheets list something along the lines of and output impedence for class A (single ended), class AB, etc. Is this the data that you use to then match up a output tranformer primary to the tubes. Now how does that work fos instance when you change tube types. I'm thinking of doing a JTM45 with 6v6s and I know you have to use different ohms jacks when compared to a KT66. I want to learn how this works (not just follow a layout) so be technical but not too technical since I'm just learning this stuff. Thanks in advance.

jtm 45 OTs were 6.6k or 8k primarys
most princetons & deluxes are 6.6k to 8 primary
