For example if you are wanting to add a tad of gain and change the V1A plate resistor to 120k ( from 100k) would it be wise to also change the value of the V1A Cathode resistor?

Is this done so the preamp tube does not clip asymmetrically?
Or do such small changes not make a difference?

In short: Lowering the Plate (load) resistor will give you less distortion, but it's not all...

It's not that I or some one else can't give you an answer to that question, it's just that the guys (or the guy) at Valve Wizard have done that very well and easy to understand, touching a lot of other aspects related to that question.
