In regards to using shielded cable to V1 pins 2 & 7, is there any reason why using thin instrument cable like Mogami 2319 for this purpose? It would seem to fit the bill as it is shielded, single conductor cable. The only shielded coax listed on the Valvestorm site is basically 2 conductor mic cable. Not that it won't work, but I have a ton of the Mogami 2319 laying around.

It should work fine. Valvestorm sells the two conductor for wiring up a PPIMV but they also have RG-174 listed below the two conductor.

As long as you ground one side properly, any type of shielded cable should work. I personally like RG-188U.
