I get the hiccoughs when I start bolting down hot sauce on an empty stomach.

Half a teaspoon of salt or sugar on the tongue usually counteracts the burn immediately. (This trick might be of help when introducing little girls or the limp-wristed to the joys and wonders of Mexican food...)

In order to mildly counteract the "bite" of hot sauces, I find that coffee, milk, orange juice and Corona are helpful. They don't kill the heat, but they can tone it down a bit.

It seems to be a matter of area on your tongue covered by the hot sauce, so go ahead and dig in. A little isn't going to hurt less than a lot. The pain is the same, and if you shovel big, heaping piles into your gob, you'll look much more heroic than if you timidly dab at it like a milquetoast.

Gave it a try with a bit on a toothpick......that spot on my tongue is still kinda dead, the sauce knocks it out and goes straight to the back of your throat from there. Gets hotter for a bit after you insert in mouth. Way cool.
So one of the store managers here brought in about an eight-pound batch of chili, with no spices at all, just meat and veggies in tomato sauce. We added about thirty drops of the 'ol Ass Reaper (maybe two teaspoons full?) and got ourselves a good sweat going. Tasted great, my lips are still on fire but it's dying down.
Get some of this shit kids, it's lovely.
Next week we'll try the Baboon Ass Gone Rabid sauce.

I make my own habaneros-mango hot sauce that'll rip your gut out. The recipe is on my comp at work (tomorrow). It is amazing with a chipotle-rubbed steak on the grill.
